  • Get hands-on, field-based learning at the on-campus Organic Farm from seed, to harvest, to our farm stand, food bank, and student-run cooperative Flaming Eggplant café;
  • Learn the science of food and sensory analysis, soils, plants, and livestock;
  • Understand and engage with food justice and policy in the classroom and through community partners including non-profit organizations, worker-owned cooperatives and small farms;
  • Learn the permaculture design process to analyze and design food, water, and energy systems;

Students put theory to practice in our excellent facilities that include a food grade lab, certified processing kitchen, and the on-campus Organic Farm, which includes three acres of fields, orchards and greenhouses producing fruit, vegetables, eggs, chickens, herbs, and cut flowers.
